Malibu Beach Inn’s Carbon Beach Club recently unveiled an exclusive summer menu item in collaboration with acclaimed Irish chef and culinary storyteller, James Gabriel Martin, founder of Leviathan. 

The new dish – Miso Beet Tartare with Avocado Lime Cream, Jalapeño & Smoked Almond – launches August 11 and will be available for a limited time through August 17.

This vibrant vegetarian tartare blends Southern California, Mexican, and Japanese flavors using the freshest local ingredients. The dish’s customizable presentation highlights seasonal garnishes such as beetroot crisps, pickled onions, pomegranate seeds, and smoked almonds — designed to reflect both California’s coastal produce and Martin’s Irish culinary roots.

“Having the chance to visit California and use incredible local ingredients allowed me to create something fresh and unexpected,” said Martin. “I chose beetroot, a staple in Ireland, to connect my heritage with SoCal’s bold flavors — like jalapeño, lime, and avocado — for a dish that feels both personal and summer-y.”

James Gabriel Martin is known for Leviathan, his multimedia food and travel project that explores Ireland’s food scene through photography, storytelling, and bespoke dining events. His current series spotlights wild foragers, artisan producers, and cultural tastemakers, and this collaboration marks his U.S. debut.
